Description
Treacle, known locally as ‘Kithul Pani’, is a sweet wild syrup made from the nectar of a type of fishtail palm, or ‘Kithul’, tree. The tree bears several flowers at once in its 15-year average life span. Local artisans climb the tree to tap the flowers by hand, using traditional knowledge passed down for generations.
The collected nectar has to be aged, slowly heated & stirred for lengthy periods of time before it achieves the perfect texture & taste.
When it’s completely free of added sugar like our treacle, the flavour is woody, floral & sweet, with a texture in between that of molasses & maple syrup.
This syrup is further used to make the solid sweet-treat locally known as “Hakuru”. This favourite among Sri Lankan desserts is made by boiling down treacle, using a very traditional & labourious process. It is then allowed to cool, & then set into moulds which traditionally are coconut shells.
This is how authentic village Jaggery takes its half-sphere shape.
This product we bring to you is a true labour of love. Both our treacle & jaggery are perfectly untainted by any harmful chemicals (of course!), and are ethically sourced locally, from those who have practiced this craft for generations.
